A typical product of Southern Italy that is made with milk from cows raised mainly in the wild. It has a smooth, thin and straw-colored rind; the dough is very hard and greasy with very fine, almost rare holes, distributed irregularly within the shape. The taste is more or less spicy depending on the seasoning which, however, must be at least 30 days.
