Piave cheese can reach its maximum expression after a maturation of at least a year, when the structure becomes crumbly and the full and absolutely unique taste. despite the seasoning, one of the main characteristics of this cheese is that the taste is never spicy but it is always sweet. The rind is smooth, regular and of an intense ocher color, the dough is intense straw-colored, grainy and crumbly and has no holes.
