Semi-fat cheese made from cow's milk from the northern part of the province of Verona. It is called d'Allevo which means seasoned, in the case of this cheese the minimum seasoning is about a year. The pasta is white or slightly straw-colored, compact and with a more or less diffuses and irregular hole, while the rind is thin and of a more or less intense straw-color. The taste, however, is slightly spicy.
