Italian cheese with Protected Designation of Origin, typical of the Veneto region. The term d'Allevo means seasoned, in the case of Monte Veronese D'Allevo Mezzano the minimum seasoning is 90 days. The rind and the dough are of a more or less intense yellow color, depending on the period of production. The paste is straw-yellow or more or less intense of color depending on the seasoning period becomes hard and slightly grainy with the ageing. The holes are absent or scattered. It has a more decisive and savory flavor, typical of aged chesse, which tends to become spicy with the protrusion of the season
