The rind and the dough are of a more or less intense yellow color, depending on the period of production. The paste is straw-yellow or more or less intense of color depending on the seasoning period becomes hard and slightly grainy with the ageing. The holes are absent or scattered. It has a more decisive and savory flavor, typical of aged chesse, which tends to become spicy with the protrusion of the season
